I want to create a couple of extra views that will group and filter on different columns. My question may be more of an architectural one, but when I create a a view, does this create a new page that a DIFFERENT configuration of a Quest Discussion web part will sit on? A different instance? Basically, I want the user to be able to pick from multiple views as they would without the Quest Discussion web part, but have in each of those views teh Quest Discussion web part host the UI. Is this how I would set this up?

You just need to create another page and configure the discussion view web part differently in each page. That will do it for creating different view for your users. After that, you just need some sort of navigation to switch back and forth between the different pages/views.
